If we aren’t supposed to eat animals, why are they made of meat?

At least the animals have a chance to run away from us, unlike potatoes, carrots etc.

Well my belief is that vegetables aren't food. They're what food eats. But I'll leave the last word on that topic to the Arrogant Worms' song, Carrot Juice is Murder:

I dont eat vegetables because I believe in protecting the environment and Im doing my part by eating the animals who are killing off these poor plants as the try to give us oxygen.
