Yes, any 100baseT ethernet hub or switch will work. The projector and server have 1gig ethernet ports, so you can use a 1gig switch and cat6 cables but you don't have to. There's not much data so 100mbit is plenty.
If you want to connect several servers for media transfer, you should use 1gig switch and cat6 for that network (it is a separate network with separate cabling, using the other server port) this makes transfers ~10x faster.

Thanks David, Dave and everyone else. I'll try changing the IP configuration first. I'll let you know in a few days when I get back to the theater.

Okay. It gets better.........

I changed the IP on ETH1 to 192.178.11.120 and the Jnior still didn't respond. With that IP still in there, I switched cables so the NEC projector was now on ETH1 and the Jnior was on ETH0. Both worked.............until I rebooted. Now ETH1 is not responding again. I did it multiple times, changing the IP on ETH1. Evry time worked until I shut down or rebooted. It DID save the IP change every time........going to buy a switch now.....
