As a customer, I don't really care how the cashier makes change, as long as he does it correctly. An understanding of basic math is kind of important, though. I hate pennies and will often give a cashier, say, $4.02 when the total $3.97 and, most of the time, the cashier will become totally confused, even though the cash register is right there to indicate thta I should get $.05 in change.
Agreed with the comment above about not handing back coins and bills at the same time. Always give the customer his coins first, and then his bills.
