I don't have a cell phone, but it's tempting to go shopping for one so I could demand one without a camera, musical ringers, color screen, bright lights, etc. and stomp out of the store in a huff when they can't accommodate me. [evil]

My cell phone just plays standard MIDI files, so I write my own ring tones. The irritating part is getting them into the phone, until I found a web site (jhonny.org) that lets you upload files, and then download them from the phone.

Currently my phone rings the fight song for the school where I teach, except for my fiancee, for whom it rings a Cinerama song.

FIGHT FIGHT FIGHT!!!! Must violence always be the answer to everything? Yes, it must. I am glad that fighting is encouraged at your school.

This is exactly what I would want, if ringtones at all! MIDI is what I do! Is this a standard feature of new phones, or polyphonic phones, or exclusive to any particular carrier, or what?

Sooner or later, some horrible sadist will put the tune from the Meowmix commercial on a mobile 'phone. [evil]

I have no idea. My phone's a two-year-old Nokia. If you happen to own one of those, I can send you a link to a page with detailed instructions. Past that, try consulting your phone's manual, is the best I can think of. I would assume that this mostly only applies to polyphonic phones, but I don't know that.
