What exactly happens when a DFP3000 is placed in bypass mode (by shutting the front panel power switch to off.) Does it act like most Dolby processors, ie: all channels are 'mono-ed' together and sent to all screen channels?

Yep.
I had to do this once and the volume was very low and you could not adjust it.

There are two trim pots on the inside of the processor that allow you to set the bypass level, just like most Dolby processors. This should have been set during the installation and alignment of the machine.
