Do they have rack mountable sleeves for the CRU drives that come from Deluxe? We have Doremi servers that don't have the bays. We have a loose sleeve hooked via ESATA sitting on the table. I want to make it more permanent and safer.

Yes.
You have to order them direct from CRU, the cinema type is not available from dealers.

The single bay rack mount model is ideal.

You will need to add a passive SATA-eSATA back plate to the server and connect its cable to an available SATA port on the motherboard.

I think the smallest rack mountable CRU bay they have is a dual unit which is what I use on our TMS. They make a table top single unit and I use a lot of those on SX-3000's. I just install a rack shelf in the pedestal to sit it on. There is also room for the drives to be ingested as well. The single unit box is built like a tank. All solid alumnium plate!

You can get single drive bays in a 1RU rack mount chassis. It has a quad connector on the back (USB, eSATA, and two of something else I don't remember), but it's just as expensive as a two-bay rack mount unit with just eSATA.

The single bay, quad connector unit is RAX215DC-QJ.
The dual bay, eSATA unit is RAX215DC-SJ.

They may have DCinema dealers. I know that we set up with them to supply 1U/1Drive units with the DSS220. In fact, they created it for us (it may be a catalog item). The original version they were selling had two bays (of which only one could be used). Also note, CRU has about 1000 variations of each item...make sure you get one with just the features you need. 41610-0499-0001 is most likely the one you want.

When I pull up the RAX215DC-QJ it is shown as a dual bay 1 ru system however, I tracked the single bay model number down and it is actually RAX215DC-SJ which translates to the CRU stock number that Steve posted.

Congratulations. Those numbers were taken from the stickers on two units I had in my hands, so I guess CRU doesn't even know what their model numbers are!

I was in contact with them. The cost is way to high per unit. I took the existing dock we have, mounted some angle pieces to the 4 corners and screwed in onto the side of the rack. Perfect and secure.
