I would think yes. The only remote risk might be burning in an image of you have a Sony LcOS. DLP's aren't bothered by freeze images. The server won't care, it's not like a VCR where you'd be grinding the tape (or in the servers' case, hard drives) against a spinning head.

While Sony lightengines may not be as 'durable' as DLPs, we often project static backdrops for hours on ours and never saw any remains of them on the following program ;-)

Bob - neither server nor projector cares. You could keep them in pause for years or for as long as you like.
Another thing to test, keep encrypted content in play-pause beyond the 6hr KDM expiration grace period...

If it's for an intermission, you should check the intermission functions of your setup.
