Does anyone know of any digital entertainment courses at any schools? or really and programs available that would look great on a resume? I'm based in NYC so anything out here is a huge help.

Can you be more specific with what you are looking for as far as curriculum? If you are talking about the business aspects of the industry, then you best bet is NYU, which always runs courses on production, financing and distribution of movies as part of their continuing education program thru the Tisch School. Here is one on distribution taught by indie film stalwart Jeff Lipsky. Here is the full on-line catalog. Mind you, none of this stuff is strictly "digital" per se, but more general industry related.

On the other hand, if you are actually looking to create digital content, there are quite a few choices besides NYU. Future Media Concepts has very good, albeit very expensive training in most current software for content creation. If you are talking more of getting behind a digital camera, and want to concentrate on lighting, set operations and gripping, then the Maine Media Workshops in Rockport, Maine, is huge with that kind of thing, and they usually attract top talent as faculty.
