I am with Phil, but I will go even one step closer to the caveman -- I want mine RARE.
I know a chef in a very high-end foo foo eatery with a French name who, although worked in a such a place was born & raised in Brooklyn. He was Italian and a weigh lifter by hobby, but incredibly imposing to say the least.
One night after he had fought with the management to purchase the most expensive quarters of aged grass-fed beef, he had is signature steak dish on the menu and a customer order his well-done. That erked Giovani, but he didn't let it get to him. However a few minutes after the main course was served, the waiter came back and said the man at table 9 who orderd the steak just asked for a bottle of ketchup. Giovani threw his hat on the floor and stormed out of the kitchen into the dining room, walked over to table #9 and asked the man if it was he who wanted ketchup. The man said it was, and Giovani slammed the ketchup bottle on the table with one hand and grabbed the plate with the other and said, "Here. Enjoy the ketchup, but you won't ruin my steak with it." and he walked back to the kitchen, steak in hand, leaving the guy sitting there dumb founded. The owner ran in after him and they had a shouting match but he wouldn't budge. Finally the boss went out to the table and apologized to the customer and said he could order anything he liked from the menu on the house....just not the steak! I love that story.
