For starters, many thanks to Brad for his RAID upgrade to eight drives suggestion. In the end I took the plunge and did it, and it went without any problem whatsoever: the new drives are in, the same version of the software reinstalled and the RAID is now initializing itself (but it's still letting me ingest a feature while it does so, which is cool!). Communication with the projector and audio processor is good, and I've got a picture and sound on the screen.
The only heart-in-mouth moment was a relatively trivial one: I couldn't for the life of me find out how to set the date and time in Show Manager (I replaced the CMOS battery while I had the server out of the rack, and lost the date and time in the process). In the end I reset it in the BIOS during a reboot, and despite there being a lot of lines about security time violations during the boot process that followed, Show Manager is displaying the new date and time correctly. I'm guessing that Dolby doesn't want to make it too easy to do this in order to discourage people from trying to cheat expired KDMs.
The info I have under "Cinema Board" for the projector (showing in info tab in DCC) is:
Interface = Series 1S FIB = EFIB Formatter = DDP1000
