Recently I took a friend's Victrola to a local man who does repairs on them. In chatting with the guy, he services machines from all over the US, and the world. While there are probably a handful of people doing this, it sounds like they are few and far between.
This man has a huge warehouse filed with parts and old machines in various states. I asked him if he has an apprentice, and he said he does not. He said his kids were not interested in learning the business, so he would do it as long as he could and then close up shop.
While film may be many years from this point, I think it will eventually head in the same direction. Because it is essentially an obsolete technology, and an expensive hobby, it's difficult to see any large number of young people taking an active interest in film. Sure there will be a handful, and enough to ensure there will be "someone" who knows how to run film and service projectors. But it will hardly be something people will get into for a career.
