Sorry, gotta defend Texas Pete!I know it isn't the hottest Hot Sauce available, but I just can't handle hot and spicy foods. Had grilled chicken at Copeland's (New Orleans theme restaurant) the other night... Chicken was great, but I could only take about 3 bites because it was just too spicy for me. Texas Pete is mostly flavor, no "hot". That's why it works for me. Not to mention, it's my family business... =) On the topic of the peppers though, the Cayenne peppers are very sweet. (as far as peppers go), the red peppers are the common base for most hot sauces, like ours and Tabasco. If you're in for more flavor go with anything Cayenne. If you want spice, go with Red. If you want "Knock-You-On-Your-Ass" go with the Habenero... WHOOOOOOOOOOooooooooooo!
