In the middle ages, monasteries often owned vast expanses of land and the peasants had to pay them in money or goods to farm the land. The cities where the monasteries were located usually had big market places. Monks produced a lot of agricultural products on their own lands and in the monasteries - many orders had their monks work in the field as they looked at physical labour as purifying the spirit. Alcohol was not outlawed at all and so the monks drank beer, wine, and whiskey from their own production.
