It's funny how some things affect me more than others.
I can eat pizza because the cheese doesn't have so much lactose in it. One or two slices will have little effect. So long as I don't make a pig of myself, I'll be OK.
On the other hand, just a couple bites of ice cream and I'm toast. No amount of lactase pills will help... only delay the onset.
The effects also seem to be cumulative. If I stay away from milk or foods that contain milk for a while my tolerance goes up. If I've been eating milk, on and off, for a few days, I have no tolerance at all.
If I stay away from milk for a whole week I can have that sour cream icing on my cinnamon rolls. If I've been eating milk regularly, even the pills become useless.
The only real problem is when I eat things that I don't expect to have milk in them. Lots of breads and baked goods are made with milk and butter. Lots of gravies and sauces are made with milk too. Most people don't have the problem of lactose intolerance, or at least they don't have it bad enough that they have to worry about it. They don't think twice about milk as an ingredient. When I eat out or at somebody else's house I have to be extra vigilant to be sure I don't get more milk than I can handle.
I don't know a whole lot about Celiac but I imagine you have some kind of tolerance to gluten even if it's very low. I bet, if you are good about eliminating gluten from your diet all week, you can have some donuts on Sunday and the effects will be tolerable if not minimal.
I think a free dozen of hot KK donuts are worth it. Just make sure you share some. It'll reduce the temptation.
